Make the sauce: Add honey, water, orange juice, and orange zest to a small saucepan. Bring to a boil and cook, stirring regularly, until the mixture thickens into a syrupy sauce.
Let the sauce cool slightly, then pour it into the pudding mold.
Preheat the oven to 180°C (350°F). Sift the almond flour into a bowl, add the orange zest, and mix well.
Warm the almond milk and stir in the Bolero Mango. Mix with a hand mixer, then add the eggs one at a time while continuing to beat.
Pour the mixture into the pudding mold over the sauce. Place the mold in a water bath (au bain-marie) and bake for about 30 minutes.
Check doneness by inserting a skewer or toothpick – it should come out clean.
Allow the pudding to cool completely before removing it from the mold. Transfer to a deep plate and serve chilled.
