This silky-smooth pudding is infused with the sweet taste of mango and orange, topped with a luscious orange sauce. The perfect way to finish a meal or simply treat yourself to a flavorful delight.


Ingredients

  • 400 ml unsweetened almond milk

  • 4 eggs

  • 2 tbsp almond flour

  • 1 large orange (zest only)

  • 1 sachet Bolero Mango

For the sauce

  • 50 g honey

  • 1 large orange (juice and zest)

  • 50 ml water


Instructions

  1. Make the sauce: Add honey, water, orange juice, and orange zest to a small saucepan. Bring to a boil and cook, stirring regularly, until the mixture thickens into a syrupy sauce.

  2. Let the sauce cool slightly, then pour it into the pudding mold.

  3. Preheat the oven to 180°C (350°F). Sift the almond flour into a bowl, add the orange zest, and mix well.

  4. Warm the almond milk and stir in the Bolero Mango. Mix with a hand mixer, then add the eggs one at a time while continuing to beat.

  5. Pour the mixture into the pudding mold over the sauce. Place the mold in a water bath (au bain-marie) and bake for about 30 minutes.

  6. Check doneness by inserting a skewer or toothpick – it should come out clean.

  7. Allow the pudding to cool completely before removing it from the mold. Transfer to a deep plate and serve chilled.
